Background and Context
Camden Food Co., a pre-existing North American and British aviation food venue, was brought to the Boston Logan airport in order to provide passengers with nutritious, on-the-go eating options. The brand is characterized by its strong set of values, which include honesty, pride, human touch and vitality through nourishment.

Design Reponse
The challenges associated with this project are similar to that of the majority of aviation casual dining designs - how to bring an existing concept to a limited footprint, satisfy the intense level of protocols and standards, all while creating an authentic experience for a variety of guest demographics. Emphasis was placed on developing an innovative approach to how we apply the brand to the space and work within the budget and time restraints.

Designing and developing any concept within aviation environments requires a thorough understanding and attention to the federal and, in this case, SSP America protocol standards. Coordination with the Massachusetts Port Authority and scheduling are therefore critical in order to work within an occupied space and finish a project on time and on budget.
